I'm trying to set up my new S3 Mini for continuous input on the keyboard but I don't seem to be able to pick that selection. Is it not an option on this phone?

Can't say about the Samsung keyboard, though I've noticed a friend of mine with the same phone doesn't use/have it. You can try the Google keyboard or Swiftkey (both free on Google Play); personally I prefer Google's app, but there are several keyboards that offer it.
