It seems that there is only an "Include Videos" option in Settings of WhatsApp. Swipe this option to "Off" to exclude videos when you make backup.

Download size < 0.15 MB. But also accurate enough, ad-free & free.

I suppose if you delete the media all is left to backup is just the text
