I have several email accounts. When adding a new contact, I do not see the option to change which account I wish to save the new contract to.

I am not clear what you mean "save the new contract to". :?
A new contact maybe has nothing to do with your email accounts.

in lollipop, when adding contact you could select 'phone' or a Google account. in nougat to no longer have the 'phone' , you can only select a Google account. why did this feature go away?
