I have the Huawei Mate SE and it uses ENUI 8.0. This doesn't allow me to download apps to a SD card, only transfer files.
I understand that I would have to root the phone to use a different interface and I know nothing about that. Any advice would be welcome.

EMUI? Do you mean that we can't install apps in SD card?
As far as I know, lots of android systems do that way in case of poor performance of apps' running.
On the other hand, it was said several days ago Huawei closed its official web page for end users to get unlocking codes for their devices. You need an unlocking code for bootloader prior to rooting your device.
